Hoda Kotb's Heart 'Aching A Little Bit' As She Celebrates Daughter's B-Day From Korea

Hoda Kotb's baby daughter turns one today – and her famous mama is off hosting the 2018 Winter Olympics!
"It's already Valentine's Day in South Korea and I am missing my Valentine's baby! We celebrated little Haley's bday before I left," Kotb, 53, wrote on a sweet Instagram video of her singing "Happy Birthday" to her stunned child.
The hilarious TODAY host also shared photos of her daughter's adorable homemade cake which had "Yay Haley!" written in blue frosting.
As Kobt is away, killing the game in South Korea, longtime boyfriend Joel Schiffman is taking care of their one-year-old girl. The couple adopted her last February, and celebrated their four-year anniversary months after.
Savannah Guthrie – who is also at the 2018 Winter Olympics and missing her kids — told PEOPLE: "I think in this situation with the time change, the 17-hour flight, it just didn't make sense for the kids. We'd be happy to see them, but I don't know that they'd be so happy sitting around in a hotel room in the freezing cold. Admitting that she and Kotb thought about bringing their children along despite their young age, Guthrie, 46, added, "I know Hoda and I both thought very seriously about bringing the kids because mostly we just don't want to be apart from them for two weeks. That's the only thing that's got our hearts aching a little bit."
As RadarOnline.com exclusively reported, Hoda Kotb has been struggling with the idea of leaving her baby at home while she's off hosting the Olympic games in South Korea. This past January, a source close to the host revealed: "Hoda doesn't know what to do with her beautiful baby girl when she goes to South Korea for two weeks to host The TODAY Show coverage of the Olympics."
"Should she take the baby with her or leave her safe at home in the USA?" added the insider, pointing out that Kotb never thought she'd have to make such a difficult decision between her family and her career. "Haley always travels with her mommy but talking a baby to South Korea for two weeks doesn't seem right."
As RadarOnline.com readers know, now that Kotb has taken Matt Lauer's job as Savannah Guthrie's permanent cohost, travel will become a much more frequent art of her job!
Eventually, Kotb decided to fly off with her NBC crew and leave her adorable child with her daddy. The insider said, however, that the TODAY anchor was "riddled with grief and felt terribly guilty."
Clearly, she's still feeling the burn, as she recently confessed to fans that she missed her Valentine's birthday baby!
