Shannon was in New York City this week with businessman boyfriend, Scot Matteson, to introduce the newest addition of lobster cakes to her QVC line. “This is just the beginning for her,” said a source close to the soon-to-be ex-wife of David Beador, 54.
Shannon spoke to Bravo’s new website The Feast recently, and revealed that she is planning to open up her own chain of restaurants in the near future. "I have the menu ready to go for Real for Real Kitchen, so I’m hopeful that things will continue to go well with QVC and then hopefully incorporate the restaurant concept," she said.
“She is already in talks with several major financiers to expand her empire and those restaurants are obviously a part of this,” the insider said.
As RHOC fans know, Shannon has lost 50 pounds since her split from David last year, and the insider revealed to RadarOnline.com that she is now planning on capitalizing on the slimdown.
“Shannon is developing her own line of fitness gear and apparel,” the source said. "And her own line of wellness shakes, too."
Photographed with Scot, Shannon looked happier than ever. “She is a completely different person than she was this time last year. That is for sure,” the source told RadarOnline.com.
