Well, according to recent research, there are significant differences between different bell peppers. From a taste perspective, green bell peppers have more bitter compounds versus the sweeter red, yellow, or orange varieties. Bell pepper seeds haven't caught on like pumpkin or sunflower seeds...but does that mean they're unsafe to eat? While most chefs toss bell pepper seeds in the trash, they are 100 percent edible. So, why aren't more people using these seeds in their recipes?

Well, the problem with bell pepper seeds is that they're incredibly bitter. No matter what dish you're preparing, it's likely these seeds will clash with the intended flavors. Plus, it can be a pain if you get these tiny seeds stuck between your teeth!

However, bell pepper seeds won't add additional heat to your recipes like jalapeno seeds. Bell peppers have a Scoville Heat Score of zero, which means they don't contain the spicy compound capsaicin.
