Kate Gosselin shot back at ex-husband Jon’s accusations that she has been an absentee mother for her eight kids while pursuing multiple show biz projects, in an interview aired on The Today Show Tuesday.

"I'm a working mom, and cameras are on me," Kate said in a clip we have for you right here on RadarOnline.com. "I've gotta work harder now that ever, because I am a single mom ... and in my heart I'll always be in the kitchen baking and cooking for them."

Kate said it's because of her children that she's taken on writing  a new book, two new TLC shows and a stint on ABC's Dancing with the Stars, as she added that she has "to provide for them," and balancing work and time with her little ones is "a struggle that every working mom, especially single moms -- have to go through."

Gosselin said her eight children "know that I have to work, they know that I have to go, but when I am with them, we make those little chunks of time we spend with each other really big."

Gosselin said her children are aware of what's going on with the divorce and "they don't like it.

"I don't think any child likes it; They still say things like, 'Oh I wish mommy and daddy could be together,' and those sorts of things. but they still have that innocent love for each of us and appreciate that," Kate said.

Gosselin, who was on The Today Show to promote her new book, I Just Want You To Know, said she wrote letters to her kids in the book "so they have advice for now, advice for the future ... kind of like a legacy."

Kate will be back on TV when Dancing With The Stars returns at 8/7c Tuesday on ABC.
